Chapter 189: Sweet and Delicious Pumpkin Cakes
"Don’t worry about the quantity this time, everyone."
"You’ve all been so patient watching the stream. As long as the dish isn’t too complicated, I’ll make extra servings and do my best to make sure most of you can get a taste."
[It’s so touching when Juju says she’ll ’do her best,’ even though I’m always one of the unlucky ones who misses out.]
[We love Juju! She’s so sweet, the sweetest streamer in the entire Federation!]
After replying to a few fan comments, the dough in Jiang Qiuqiu’s hands had gradually turned a pale yellow. The bits of pumpkin were no longer visible to the naked eye.
The soft, glutinous pumpkin and rice had almost completely blended together. Jiang Qiuqiu pinched off a small piece of dough, placed it in her palm, and flattened it. The resulting patty was slightly moist. "Don’t knead the dough until it’s too dry," she explained. "You can adjust the moisture level as you go. If it’s too dry, it will fall apart when you fry it. If it’s too wet, it won’t hold its shape."
"While we portion out the dough, let’s go ahead and heat up the oil."
[Heating oil? Does that mean this is a deep-fried sweet treat!?]
"That’s right."
As she spoke, Jiang Qiuqiu poured a fairly generous layer of oil into a skillet.
The clear oil hit the pan. There was nothing in it yet, but the chat immediately exploded.
So many delicious dishes had started from this very sight!
The sizzling oil in the pan mirrored the sizzling excitement in everyone’s hearts!
While the oil heated over low heat, Jiang Qiuqiu started preparing the patties. She took out a large log of dough, gave it a brief knead, and then divided it into small balls, laying them out on her pastry board.
Then, with a few quick movements, she flattened all the balls.
Jiang Qiuqiu’s hands moved with incredible speed. In just a few minutes, her work surface was covered with flattened dough patties.
There was still some pumpkin dough left in the large bowl. Jiang Qiuqiu brought out a plate of breadcrumbs. "To give the fried pumpkin pancakes a crispier crust and a more complex texture," she said, "I’m going to coat the patties in a layer of breadcrumbs."
"All these ingredients were purchased from Taotao Fresh. For this last step, if any of you aren’t fans of breadcrumbs, you can use lightly sweetened shredded coconut instead."
As soon as she finished speaking, she was already pressing several of the pumpkin patties into the breadcrumbs.
The surface of the soft dough was still slightly damp, so it was easily coated all over. To prevent the breadcrumbs from falling off during frying, Jiang Qiuqiu pressed down gently on each patty to make them more compact.
Her movements were so practiced and automatic that the viewers could only see Qiuqiu’s hands flying across the work surface. Soon, the flame on the stove grew stronger. The pan began to make a soft sizzling sound—the oil was hot. It was time for the pumpkin pancakes to go in.
One by one, the small, orange-yellow patties were lowered into the hot oil. As they were gently fried, the oil saturated them, bringing out a unique color in the pancakes.
In the high heat, the breadcrumbs began to turn crispy, while the pumpkin patties themselves took on an even deeper golden hue.
The aroma of fried food quickly wafted through the stream. Without a doubt, a delicious treat was just moments away.
Jiang Qiuqiu picked up a pair of long chopsticks and began to turn the pumpkin pancakes. "At this point, we’ll turn the heat to medium and flip the pancakes every so often."
With the heat distributed evenly, the crispy crust of the pumpkin pancakes would soon begin to puff up.
The expansion was slight each time, but after a few flips, the once ’plain and unremarkable’ pancakes began to inflate like little balloons, turning into puffy oval rounds.
"And at this point, we can take the pumpkin pancakes out."
This was the first batch of pancakes out of the pan. Jiang Qiuqiu arranged three on one plate and set another plate in front of herself.
The pancakes already looked beautiful. The heat had been controlled perfectly; the surfaces were puffed up without any hint of a charred, brown color as they rested quietly on the white porcelain plate. Jiang Qiuqiu took out a small brush and swept it casually over the pumpkin pancakes.
