The process for making the beef filling was pretty similar to the one for the pork.
The beef was just cut into larger pieces, and the seasoning oil was switched from Sichuan peppercorn oil to fried onion oil. As far as Jiang Qiuqiu was concerned, nothing paired better with beef than onions.

The last filling was for a semi-vegetarian dumpling that Jiang Qiuqiu was personally quite fond of. ’Call it vegetarian, and it still has egg. Call it non-vegetarian... but subconsciously, I’ve always felt any dumpling without a meat filling counts as vegetarian.’
Vibrant green chives were chopped into small sections, releasing a captivating aroma. To keep the livestream from getting boring while she made the fillings, Jiang Qiuqiu would add her own commentary as she chopped and mixed, describing what each filling tasted like raw and how it would taste once cooked.
This prompted a comment from the audience: #Forget wrapping them, can’t you just cook some of the filling for us to try first?#
Of course, that wasn’t going to happen. After she finished chopping the chives, Jiang Qiuqiu cracked a large bird egg into a bowl and beat it evenly with chopsticks. She turned on the heat and pulled out her custom-made skillet. Then, Jiang Qiuqiu began to make thin egg crepes.
It only took a very thin layer of beaten egg and a little oil. The high heat caused the egg to set quickly. Once it turned from yellow to pale, Jiang Qiuqiu would let the crepe sit in the pan for another moment. This made the originally tender crepe chewier, giving it a richer texture.
One after another, she finished the crepes and set them aside. Jiang Qiuqiu quickly stacked them, sliced them into fine strips, and mixed them in with the chives, adding a few seasonings. And just like that, the final filling was ready.
Next up, it was time to show off her skills!
The proofed dough was rolled into a long log, cut into small portions, and flattened with the palm of her hand. To save time, Jiang Qiuqiu sprinkled some flour between the flattened pieces of dough before taking up her rolling pin.
Rolling dumpling wrappers requires a certain knack; a beginner’s attempt will always end up uneven and not quite round.
An experienced hand, however, can control the dough’s movement. With that same knack, a deft turn of the hand, and a flip of the wrapper, a perfectly uniform dumpling wrapper appears.
Of course, with a single turn, Jiang Qiuqiu produced several wrappers on her work surface.
They were stacked neatly together. The whole process of making the dumpling wrappers looked like an acrobatic performance.
It got to the point where the audience felt like they weren’t just watching a food streamer, but a crafting streamer as well.
